A word to our growers at the start of the season sees certified organic trees in the Hawke's Bay set aside for this Eau de Vie. The perfect apple on one of these trees is not the most symmetrical, the one without a single mark, or one that is picked half ripe, it is the tastiest and juiciest one. Each apple on one of these trees is given the chance to be all it can be – not picked until peak ripeness. Every one of these gifts of nature arrives at the distillerie ready to have its essence captured and bottled.

Tasting notes: Fermented and distilled from Hawke’s Bay grown, tree-ripened certified organic fruit, delivering the unmistakable aroma of fresh Cox’s Orange Apples. Opens with a light sweet, juicy feel yet turns dry and angular. Artisanal and pure.
